The Bikini Cocktail

Serves 10 guests

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Premix (yields 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Combine the listed components inside a pot, bring to a simmer, agitating to dissolve. Next, turn off the heat and leave to cool down entirely. Pour to a clean bottle, close it keeping it in the refrigerator, where it will keep for up to four weeks.

To make Batch Mix: Combine the specified liquids in a big jug, leave to sit for an hour, then filter it preferably using cheesecloth, to ensure it's completely strained.

For serving: Add 85ml of the premix into your stirring glass filled with ice, and agitate gently for a minute to chill. Filter to a chilled martini glass or similar, top with a few cranberries and complete it using a brief mist of mandarin oil over the top.
